The olive oil used for frying can be reused several times always trying to use it to fry the same type of food and previously filtering the impurities after each use.
After frying we must let the oil cool and filter it so that no residue remains. Containers specifically created to filter and preserve used frying oil are available on the market. They are called grease fittings and are made of stainless steel. They have a removable filter for proper washing and a lid that allows hermetic closure.
It is advisable not to store the oil already used for a long time and not reuse it more than three times in the case of olive oil and once in the case of sunflower oil, since the latter resists less high temperatures. Once deposited in the grease bowl, previously filtered, it is convenient to store it in a cool and dark place. Heat and sunlight can eliminate some of its properties.
